Rising Moon Wellness Dal

Start by simmering a chopped onion and pepper in a small amount of olive oil.

Add some garlic and salt and pepper.

As onion softens add 1-2 cups of lentils of your choice (I love pigeon peas)

Stir in and let heat up for a few minutes.

Next add 1-2 cans of diced tomatoes and enough water to cover the lentils.

At this point I start adding spices such as ginger, coriander, cumin, curry, cloves, cinnamon, cardamom.  Sorry I never measure, I go by how awesome it smells then adjust spices at the end.

Let simmer until lentils are tender.  When more liquid is needed I add a can of coconut milk.  Now is the time to taste and add whatever spice you want to have prominent as the flavor.

Experiment! Food is fun!  Go for it!

I top each serving with some avocado slices and a little siracha
